Meatloaf
This does not really look like a loaf, but more like shredded beef. This delicious concoction completed with rice, green beans and plantain makes it a hearty meal that will keep you satisfied for hours.read more
Ingredients
- 1/2 kilo skirt (flank steak)
- 1 onion, chopped into small pieces
- 1 paprika, chopped into small pieces
- 2 sticks of celery, cut into small pieces
- 1 branch of cilantro, chopped
- 6 tomatoes canned, drained.
- garlic, salt to taste
- optional one meat bouillon cube.
Directions
Place the meat to cook in enough water, add half an onion, and a little bit of salt. Separate water, don't discard.
In about 45 minutes later, remove the meat and let it cool enough to shred it with your fingers.
In a large pan, place about 1/3 cup of oil and fry the garlic, onion, cilantro, peppers, celery, etc... all except the tomatoes and shredded meat. When you get a rich smell add the shredded meat and fry a little while more. Then add the tomatoes and fry another little while. Then add the crumbled meat bouillon cube, with two cups of water. Simmer.
Remove from heat when the meat has reached the right consistency.
Prepare rice and serve with cooked green beans and cooked or fried plantain and voila!
Tips: I like to pour the left over sauce over the rice. Remove the pan from the heat, add salt to taste.
