Bolo di Banana (Plantain Pudding)

Ingredients
- 5 very ripe plantains
- 1/3 cup of butter
- 2 1/2 cups of brown sugar
- 2 Tbs. water
- 1/2 lb. sharp yellow cheese
- 1/2 cup cracker crumbs
- 2 tsp. cinnamon
- 1 1/2 tsp. all spice
- 1/2 cup raisins
- 1/2 cup dry sherry
Directions
Peal and cut in half lengthwise:
- 5 very ripe plantains
Melt in a heavy skillet:
- 1/3 cup of butter
Fry the plantains until golden brown and remove from the skillet.
Stir into the drippings until the sugar is dissolved:
- 2 1/2 cups of brown sugar
- 2 Tbs. water
Remove from the heat.
Mash the plantains well, adding the brown sugar mixture.
Grate and add to the plantains:
- 1/2 lb. sharp yellow cheese
Preheat oven to 350ðF,Stir in:
- 1/2 cup cracker crumbs
- 2 tsp. cinnamon
- 1 1/2 tsp. all spice
- 1/2 cup raisins
- 1/2 cup dry sherry
Mix the ingredients well and pour into a well buttered casserole.
Bake for about 40 minutes.
Do not permit the pudding to become dry.
