Arepita di pampuna (pumpkin pancakes)

A delicious and sweet side dish that goes well with stew dishes and soups.

Ingredients

  • 2 cups boiled and mashed pumpkin, drain pumpkins well after boiling and mash immediately
  • 1/2 cup flour
  • 1/4 cup Milk
  • 1 egg
  • 1 tsp. cinnamon
  • 2 tbsp. sugar
  • 1 pinch salt
  • 1/4 tsp. vanilla extract
  • 1 pinch baking Powder

Directions

Mix everything together in a blender or in a bowl. On a griddle use oil spray to fry. Use 2 tablespoons full of the mixture to make one arepita and place them on the griddle. Turn the arepitas upside down when the downside is brown or dry
