Pound Cake

Serves 8.
Ingredients:
- 2 large lemons
- 2 cups sugar
- 4 large eggs
- 2-9" pie crust, unbaked
- vanilla ice cream or whipped cream
Wash, quarter, and slice lemons very, very thin and place in a bowl. Cover with sugar. Let
stand at least 2 hours.
Lightly beat eggs. Mix with lemon and
sugar. Pour into prepared pie crust. Cover with second crust. Bake in 450? oven for 15
minutes. Reduce heat to 375? and bake 25 minutes more.
Serve with ice cream, whipped cream or
plain.
