Welcome to the Local Cuisine page! Every month we will feature a recipe for a typical Aruban dish or delicacy. You can print out this page and start up your own Aruban recipe book! If you're interested, you can also check out some of the

This Month's Recipe:

Ch?eau

(Chocolate Trifle)

...but don't forget to check out the Aruban delicacy

Serves 24

Prepare pan levi as indicated in Panlevi

Melt over boiling water, or a very low flame:

  • 4 ounces unsweetened baking chocolate

Add a little at a time:

  • 1 1/2 cups rich cream

Beat long and hard as there should be no lumps. Chill thoroughly.

Beat until light and creamy:

  • 2 cups butter

Beat in:

  • 3 1/2 cups confectioners sugar, sifted

Beat in one at a time:

  • 4 eggs

Add:

  • 1 tsp. vanilla

Blend in the chilled chocolate mixture. Place five or mix panlevi in the bottom of a large serving bowl. Cover with a layer of the chocolate. Add a second layer of panlevi, pressing the cookies into the chocolate. Repeat until the bowl is full, finishing with a layer of chocolate. Garnish with snipped maraschino cherries and slivered almonds. Refrigerate overnight and serve well chilled.
